Thursday 2nd September 2010 – Cabernet Day!
Heeding the good advice from the Catavino blog post on using, searching and engaging with the #Cabernet hashtag on Twitter, Facebook, Flickr etc we selected a bottle from our Chalet Balaena cellar in France. And not just any old Cabernet…
But first I posted the teaser photo on Twitter and Facebook:
While the Loué chicken was roasting, the wine was breathing quietly. When the sun had set, the gravy was made and we sat down for our #Cabernet dinner.
And what a treat we enjoyed!
Domus Aurea Cabernet Sauvignon 1996 Maipo, Chile
Gorgeous deep velvety red. Mature almost cooked red fruits on nose. Dry, graceful mature tannins with the ripe fruit continuing in the palate with a hint of minty eucalypt. Big mouthfeel, complex. This great wine is at its apogée and, alas, we have no more!
Made by Chilean star winemaker, Ignacio Recabarren, at Viña Quebrada de Macul, in the Maipo, unbelievably close to Santiago.
